Chicken Cacciatore
2 - 3 lbs chicken ( serving pieces )
Chicken coating. In a plastic bag combine:
1/2 cup flour
1 1/2 tsp salt
1/4 tsp pepper
3 tbsp Schneider's Pizza seasoning
To coat evenly shake 2 pieces chicken at a time in plastic bag.
Combine 2 eggs, well beaten
1/4 cup milk
1 tbsp chopped parsley
Place 4 tbsp olive oil in skillet - medium heat. Dip each piece of coated chicken in egg mixture. Roll dipped pieces in:
1/2 cup grated parmesan cheese
2 tbsp Schneider's Parmesan and Garlic seasoning
Brown. Place in casserole dish.
Combine:
3 1/2 cup ( 28 oz ) tomatoes, sieved
1 1/4 tsp salt
1 tsp oregano
1/2 tsp pepper
3 tbsp Schneider's Pizza seasoning
1 tsp chopped parsley
Pour mixture over fried chicken. Bake for 1 - 1 1/2 hours at 350 degrees F or until chicken is tender. Sprinkle with Schneider's Parmesan and Garlic seasoning.
OPTIONAL: FOR FRIED CHICKEN DO NOT ADD TOMATO MIXTURE. ONCE BROWNED PLACE IN CASSEROLE DISH, BAKE.
