So as I am sitting here, I’m thinking about all those wonderful summer days where bbq’s were the obvious choice for supper. Pull out some burgers or chicken, fire up the grill and voila, supper. But of course, the questions always remains: what to eat with that? A salad? Sure but which kind? Caesar? We could do that but that is our never fail, go to salad. How about something different? How about something very different? I like that.
We had invited our friends over for one of those so-called summer days (I write this while it is -20 degrees celsius outside, and that is actually much warmer than it was on the weekend), and she offered to bring over a salad. Well of course I couldn’t refuse. What I didn’t know though is what kind she was bringing. To my utter delight, she brought a bowl of popcorn. I thought, that’s great! Popcorn goes with everything. But wait… she had a bunch of other things too: grated cheese, chopped celery, chopped cucumbers, chopped peppers and of course bacon. And a creamy dressing. She definitely had me wondering what she was up to.
I watched as she proceeded to combine the popcorn with all those things, tossing it with the dressing! I was in awe. What’s better than a big bowl of popcorn? A popcorn salad!! Who knew? It was the perfect add on to the burgers. Being the popcorn lover that I am, this was an easy sell for sure. I was so excited to try this for my next engagement. Of course, I didn’t want to just use plain popcorn. I tried it with a small amount of Dill Pickle Seasoning. And that was very good. But you sure don’t need much since you don’t want it to over power.
The options are endless with the creations that can be made with all the gourmet seasonings we have. So the next time you are called upon to bring that special something to your next get together, remember the Popcorn Salad. I guarantee, it will be a hit!
The popcorn salad sounds very interesting. I did not notice a heading on this website for recipes as there used to be on the previous website. Is the recipe posted somewhere? If so, could you please direct me? If not, would you mind posting it or emailing it? I think adding the ingredients could be “eye-balled” but I was mostly curious as to what type of creamy dressing as I think I would like to try this for the next church potluck.
Thanks for the question, Virginia. Currently we do have a recipe section like we did with the previous website. As we move along, any recipes will be posted here on my blog. This recipe, however, is at the discretion of the creator. Add as much or little of the add ons as you like. As per the dressing, I use Miracle Whip all on it’s own. I sometimes use a little vinegar to thin the Miracle Whip so it is easier to toss with the popcorn. All personal preference. How much Miracle Whip you ask? That all depends on how much popcorn you have and how creamy you like it. Less is better though with this one since you don’t want to have soggy popcorn. Unless of course you like soggy popcorn, and I know some people do, then more would be better. Once you have made it the first time, you will know what you like and don’t like. I’d love to hear how it goes!
